Tuna tataki with shiso sauce

Ingredients

Method of preparation:

Light soy sauce, mirin  and sake mix and heat over medium heat.

Place the whole piece of fish in the cooled marinade for 45 minutes.

Then, without rinsing, remove excess marinade by blotting well with a paper towel.

Fried on all sides for a few seconds, cut a whole piece of marinated tuna into slices.

Grease the inner parts of the tuna slices with wasabi and put thinly sliced cucumber, microgreens and green onions .

Serve pieces of tuna wrapped in rolls with with shiso sauce.
