Bluefin Tuna is a premium fillet with a rich flavor and high Omega-3 content — a standard for sushi/sashimi, tartares and steaks. The fish is processed according to the Japanese IKI JIME method (stress-free) and instantly deep-frozen to −60 °C right on the farm. This preserves the natural color, smooth texture and sashimi-grade quality without ice crystals.
Location: Pelagos farm is located near the island of Balabra between the islands of Žut and Sit (Adriatic) — a naturally protected area with minimal stress for the fish.

Low stress — better texture: protected farm water area, daily monitoring of fish condition (temperature/oxygen), computerized net cleaning. IKI JIME: Japanese method that minimizes stress — lactic acid does not enter the muscles, so the color and taste remain pure.
Premium diet: fresh small pelagic fish (during the moonless periods) + IQF feed during the moon phases and off-season.

Storage conditions and shelf life
Store for 12 months from the date of production at a temperature not higher than -18°C and relative humidity not higher than 80-85%. Do not refreeze.
