Pickled redish daikon Takuan has a sour taste, so it is better to combine it with something sweet to create a balance of flavors. In rolls, for example, it will go well with sweet pickled pumpkin or salty shiitake cooked in syrup. And in salads it will be great to "play" in a pair with a sweet dressing.
