Mamenori or soybean paper, also known as mame-nori-san, is a thin wrapper used as a substitute for nori in sushi. Made from soybeans. Compared to nori, which is made from seaweed, mamenori is softer, has a texture similar to rice paper wrappers, a milder taste and a neutral smell. Mamenori are used as wrappers for spring rolls and desserts.

Storage conditions and shelf life
